Zucchini, Bacon and Borlotti Bean Soup

Ingredients

4 zucchini, grated
100g bacon, diced
2 potatoes, peeled and diced
1 x 120g sachet McCormick Slow Cookers Italian Chicken, Tomato and Vegetable
500 ml (2 cups)water
½ cup cream
½ cup Parmesan cheese, grated

Preparation time: 15 minutes
Cooking time: 4 hours
Serves: 6

1. Brown zucchini, bacon and potatoes and place into slow cooker insert pot.

2. Wash beans (included in pack) and discard any impurities, add beans to insert pot. Mix McCORMICK Slow Cookers Soup Italian Chicken, Tomato & Vegetable recipe base with water and pour over the vegetables then stir through.

3. Cover and cook for 4 hours on HIGH or 8 hours on LOW (Keep covered during cooking. Cooking times may vary between Slow Cooker models)

4. Pour the cream into the soup and puree.

5. Serve topped with Parmesan cheese.
