Tuscan Sausage Bolognese

Ingredients

375ml pack Campbell’s Real Stock – Beef
2 tbsp olive oil
500g Italian sausages
1 medium onion, diced
3 cloves garlic, finely chopped
1 red capsicum, diced
200g sliced swiss brown mushrooms
2 tbsp tomato paste
1 x 400g can diced tomatoes
1 tsp dried oregano
¼ - ½ tsp finely chopped chilli, to taste
freshly ground black pepper, to taste
300g dried linguine, cooked and drained
grated Parmesan cheese, to serve

Preparation Time: 10 mins
Cooking Time: 45 mins
Serves: 4

1. Heat 1 tablespoon oil in a large deep frying pan over medium-high heat.
2. Add the sausages and cook for 5 minutes until well browned and cooked through. Remove, cut into 2cm pieces and set aside.
3. Heat remaining oil over medium heat. Add onion and cook for 3 minutes. Add garlic, capsicum and mushrooms and cook for 5 minutes until softened.
4. Stir in stock, tomato paste, diced tomatoes, oregano and chilli. Bring to the boil, cook for 2 minutes. Reduce heat, add sausages and cook for 8 – 10 minutes.
5. Serve over cooked linguine and sprinkle with cheese.
