The finalists face round one which is a of basic skills and knowledge test. First task is to name that spice. Both contestants score 3 points
Adam and Callum must identify three different fruits. Adam scores 2 points but Callum scores just 1
Cloche three is lifted and the contestants must identify three cheeses. Callum incorrectly identifies cheese one and scores only 2 point to Adam's 3 points
Callum has difficulty recognising the second and third sauces. Adam picks up another 3 points but Callum scores only 1
The finalists must produce some turned carrots, as well as julienned and brunoised. Callum picks up 2 points but Adam scores only 1
Callum and Adam have just 6 minutes to produce a perfect three-egg omelette.
Callum scores 1 point for his omelette and Adam scores 2, bringing Adam to 17 points and Callum to 13 points at the end of Round 1
Round Two is the invention test and the contestants have 2 hours to make one dish featuring one protein cooked three ways
Adam has chosen pork belly for his protein and explains the elements to Gary and George
Callum has produced an assiette of chicken and peas which includes a boudin blanc and a pea mousse!
George describes the sauce on Callum's dish as "lickable, liquid gold". All the judges are extremely impressed with Callum's dish
Adam calls his dish 'Three Little Pigs' which is pork belly three ways including a steamed bun and minced pork with an egg custard
Adam is stunned by the feedback he receives for his dish in Round 2. Matt Moran describes comments "you are a serious cook!"
The finalists are unsure what the dish is that Peter Gilmore has revealed, it is in fact a dessert called a Guava and Custard Apple Snow Egg
Callum has some bad luck when producing the dessert as a piece of the granita flips onto the floor and he hasn't made enough meringue's to have spares…
Callum carefully arranges the snow eggs in the glasses before time runs out!
Callum, the dessert king, has impressed the judges with his recreation of the Snow Egg.
Despite Adam's trouble with the tuile, his dessert is hard to fault and the flavours are amazing
Callum receives a 9 out of 10 from Matt and an 8 from the three other judges, taking his total score to 82 out of 100 points!
Adam receives 9 points out of 10 from all four judges and Callum congratulates Adam with a big hug
With a total of 89 points to Callum's 82 points, Adam has won!
