Thai Salmon Parcels

Ingredients

1 ¼ cups jasmine or long grain rice, washed well
1 x 35g sachet McCORMICK Rice Cookers Green Curry, Chicken & Coconut Rice
165ml coconut milk
½ cup fresh coriander leaves
4 x 160g salmon fillets, skin removed
¼ cup lime juice

Prep time:  25 minutes
Cooking time: 35 minutes
Serves:  4

1. Place washed rice, McCORMICK Rice Cookers recipe base, coconut milk and 350ml water into the rice cooker insert pot and stir.

2. Cover with lid and press selector control to COOK (DO NOT REMOVE LID during cooking). Cook until the selector control switches to KEEP WARM.

3. Fold through coriander leaves. Place a sheet of heavy foil on a flat surface, and spoon ¼ of the rice mixture into the centre. Top with one salmon fillet and drizzle with lime juice. Wrap parcel tightly and repeat with remaining rice and salmon until you have 4 parcels.

4. Place parcels gently in cleaned rice cooker insert pot, then pour over ½ cup (125ml) boiling water. Cover with lid and press selector control to COOK. Cook until the selector control switches to KEEP WARM. Carefully remove steamed parcels, allow to sit for 5 minutes, then unwrap and serve.
