Method

Makes: 14 large
1. Place washed rice, McCORMICK Rice Cookers recipe base, coconut milk and 350ml water into the rice cooker insert pot and stir.
2. Cover with lid and press selector control to COOK (DO NOT REMOVE LID during cooking). Cook until the selector control switches to KEEP WARM.
3. Fold through snow peas, capsicum and lime juice, then tip onto a tray and allow to cool. Wet rice paper wrappers according to instructions. Lay one rice paper wrapper on bench surface, top with a few herb leaves, a dollop of sweet chilli sauce and place 1/3 cup rice mixture down the centre of the wrapper*. Fold over then roll tightly. Repeat with remaining rice paper wrappers and filling. Serve with sauce if desired.
*Shape rice mixture into a croquette shape before placing on the rice paper to make it easier to roll
Tip: Delicious with a bit of shredded chicken added to the filling too!
