Spicy Italian Sausage Soup

Ingredients

6 spicy Italian sausages, poached, skinned and sliced
2 carrots, peeled and diced
2 zucchini, diced
200g pumpkin, peeled and diced
1 ½ cups fresh tomatoes, chopped
1 x 120g sachet McCORMICK Slow Cookers Soup Italian Chicken, Tomato and Vegetable
1 L water
½ cup parsley, chopped

Preparation time: 15 minutes
Cooking time: 4 hours
Serves: 6

1. Place sausage, carrots, zucchini, pumpkin and tomatoes into slow cooker insert pot

2. Wash beans (included in pack) and discard any impurities, add beans to insert pot. Mix McCORMICK Slow Cookers Soup Italian Chicken, Tomato & Vegetable recipe base with water and pour over sausages and vegetables then stir through.

3. Cover and cook for 4 hours on HIGH or 8 hours on LOW (Keep covered during cooking. Cooking times may vary between Slow Cooker models)

4. Stir through parsley to serve.
