Method 
Step 1: To make the dipping sauce, combine the sake, orange juice, rice wine vinegar, soy sauce and mirin in a small saucepan over medium heat. Simmer for 8-10 minutes or until reduced by a third. Set aside to cool. Once cool, stir through sesame oil.
Step 2: Combine sesame seeds, salt and pepper in a shallow dish. Coat tuna pieces with sesame mixture, pressing firmly with your fingertips.
Step 3: Heat oil in a large frying pan over medium-high heat. Sear tuna on all sides, about 2 minutes for rare or until cooked to your liking.
Step 4: To serve, slice tuna into 1cm pieces and arrange on a plate with the dipping sauce. Garnish with micro mustard greens.
