San Choi Bau

Ingredients

1 tsp olive oil
500g chicken mince
1 x 2 cm piece fresh ginger, peeled and finely chopped
1 ¼ cups long grain rice, washed well
1 x 35g sachet Rice Cookers Chinese Special Fried Rice
2 tbsp light soy sauce
100g water chestnuts, sliced
4 spring onions (shallots), sliced
100g washed bean shoots
12 large iceberg lettuce leaves to serve

Prep time:  15 minutes
Cooking time: 20 minutes
Serves:  12

1. Heat oil in a frying pan and pan-fry chicken and ginger then add to the rice cooker insert pot. Place washed rice, McCORMICK Rice Cookers recipe base, soy sauce and 2 cups (500ml) water into the rice cooker insert pot and stir.

2. Cover with lid and press selector control to COOK (DO NOT REMOVE LID during cooking). Cook until the selector control switches to KEEP WARM.

3. Fold through water chestnuts, spring onions and bean shoots. Let stand for 10 minutes with the lid on. Serve San Choi Bau in crisp lettuce cups, or arrange lettuce on a large plate next to the bowl of San Choi Bau and let people serve themselves.
