Tomatoes, so versatile and can be the anchor for so many recipes.

My knife, a good knife is essential to creating good food.
What’s your favourite meal of the day – breakfast, lunch or dinner?
Dinner.
What do you prefer, chicken, beef, seafood or tofu, and why?
Seafood, the selection is enormous and can inspire amazing food. Kept fresh and simple always the best .
What dish would be the way to your heart?
Anyone who cooks me a meal when I arrive home from a long day at work will always get a smile from me.
What’s your favourite tune to cook to?
“Girls Just Want To Have Fun” ;o)
Describe how you felt during the MasterChef audition?
Nervous, excited and apprehensive. So once you find out you’re through, it is totally overwhelming.
Tell us about your journey into the Top 20?
An amazing adventure. My life has been turned on its head! One moment you are living the stock standard life, about to be married and then BANG! This journey gives me the perspective to always expect the unexpected.
What do you think you’ll learn from being on MasterChef?
How to improve as a cook and expand on my knowledge of food.
Are you nervous about cooking for the judges and why?
Of course, I am an amateur cook with four years experience, cooking for giants of the industry.
Tell us about how you got into cooking and how old were you?
When I left home for the first time I had no choice but to start cooking for myself.
What’s the first meal you remember cooking and was it a success or a disaster?
Chicken breast on couscous. It was dry, stringy and just downright nasty.
Who do you cook for the most?
Family and friends.
What do you love and what do you hate about cooking food?
I love to see people enjoy what I have prepared. I hate the limited opportunities I get to cook.
What three ingredients would you take with you to a desert island and what would you cook with them?
Ice cold water, lemonade icy poles and an esky. I imagine it would be pretty hot on this island.
If you were having any three people, alive or dead, over for dinner, who would they be and what would you cook for them?
Huey, Dewey, and Louie. I would cook them pan roasted Donald Duck.
What inspired you to go on MasterChef?
My wife.
And how do you like your eggs?
In a carton of a dozen.
