Rolled Lamb with Indian Rice

Ingredients

1 ¼ cup basmati rice, washed well
1 x 40g packet sultanas
1 x 35g sachet McCORMICK Rice Cookers Mild Indian Rice
50g slivered almonds, toasted
½ cup dried apricots, chopped
1.5 kg  lamb shoulder, de-boned and flattened out

Prep time:  30 minutes
Cooking time: 1 hr 30 minutes
Serves:  6-8

1. Preheat oven to 200' Celsius.

2. Place washed rice, sultanas, McCORMICK Rice Cookers recipe base, almonds, apricots and 2 cups (500ml) water into the rice cooker insert pot and stir.

3. Cover with lid and press selector control to COOK (DO NOT REMOVE LID during cooking). Cook until the selector control switches to KEEP WARM.

4. Let stand for 10 minutes with the lid on then let cool.

5. Open the lamb onto a flat surface and spread 1 ½ cups of the Indian rice onto the inside of the lamb. Roll the lamb up and secure with kitchen string.

6. Oil and season the lamb with salt and pepper then bake for 1 ½ hrs. Remove from oven and let rest for 10 minutes. Slice and serve.
