Sumac School Prawns

Sumac School Prawns

Ingredients

  • 1L vegetable oil, for frying
  • 200g green school prawns, unpeeled
  • 75g (1/2 cup) plain flour
  • 70g (1/2 cup) cornflour
  • 2 tablespoons sumac
  • Good pinch salt

Method

Preparation: 15 minutes
Cooking:  6 minutes

1. Half-fill a deep fryer or wok with oil and heat to 180°C.

2. Whisk flour, cornflour, sumac and salt and pepper together until combined. Toss prawns in mixture until evenly coated, shake off excess.

3. Deep-fry prawns, in small batches for about 2 minutes or until crisp. Drain on paper towel.
