Preheat the oven to 180°C and spray baking tray with cooking oil.
Chop the potatoes, capsicum and red onions into chunky pieces, and place them at one end of a baking tray (don’t forget to add some oil).
Sprinkle the ingredients with half of the Recipe Base, and toss through before baking for 30 mins.
After 30 mins, cut the chicken breasts into four portions and add to the tray of vegetables. Sprinkle the chicken with remaining Recipe Base and toss to coat the chicken well before continuing to bake for a further 20 mins or until golden brown.
Squeeze the lemon juice over the chicken and vegetables before serving.
