For the perfect mash, peel the potatoes and cut them into large chunks. Cook until just tender, around 15 minutes should be plenty.
Mash the potatoes whilst still hot adding butter, around a ¼ cup of milk, a splash of olive oil and a pinch of salt. Whisk until nice and smooth and you’ve go the perfect accompaniment lamb.

Cook the peas in salted boiling water and garnish with rosemary and springs of mint.
