Ingredients

  • 500gLean chicken breast
  • 1/2Butternut pumpkin (400g)
  • MasterFoods® Master Mix™ Moroccan Chicken & Vegetables Recipe Base
  • 1 cupUncooked rice
  • 1 x 400g Can Chickpeas, drained
  • Juice of 1Lemon (50g)
  • 1/2 cupSultanas (80g)

Method

    To cook simply...
    • Preheat the oven to 180°C and spray baking tray with cooking oil.
    • Dice the pumpkin into cubes, cut the chicken breast into four portions and place it onto the tray next to the pumpkin.
    • Sprinkle the Recipe Base over the chicken and pumpkin and toss to coat. Then bake for 25 - 30 mins or until cooked
    • Next, cook the rice according to instructions on the packet. Once cooked, mix through drained chickpeas, cooked pumpkin and sultanas
    • Before serving squeeze lemon juice over chicken, vegetables and rice salad
    Notes: Preparation Time: 20 mins
    Cooking Time: 30 mins
