Gazpacho the Nando’s Way

Gazpacho the Nando’s Way

Serves 6 as a starter or 4 as a main course

Ingredients

  • 1Green Capsicum, seeded and roughly chopped
  • 1Red Capsicum, seeded and roughly chopped
  • 1⁄2 English Cucumber, roughly chopped
  • 1Onion, roughly chopped
  • 1Celery stick, chopped (small)
  • 2Tinned canned tomatoes (reserve the juice)
  • 2 tbspRed Wine Vinegar
  • 2 tbspOlive Oil
  • 1 tbsp Sugar
  • 2tbspNando‘s Hot Peri-Peri Sauce (or depending on heat tolerance substitute with Nando’s Mild, Extra Hot or Extra Extra Hot Peri-Peri Sauce)
  • Salt and Freshly ground pepper to taste
  • 6Bread sticks (for Garnish)
  • 1⁄4c Basil Pesto (for Garnish)

Method

Preparation Time: 20 mins
Total Time: 20 mins

Process all the ingredients together in a food processor until finely chopped but not smooth. Season to taste and chill over night in the refrigerator. Serve chilled, garnished with basil pesto and bread sticks.
