Ingredients

  • 500g Stewing Beef, cubed
  • 3 Fresh or Dry Bay Leaves
  • 2 Celery Sticks, chopped
  • 2 Carrots, peeled & chopped (medium)
  • 2 Onions, chopped (medium)
  • 2tsp Olive Oil
  • 2tbsp Cake Flour
  • 100g Mushrooms
  • 400g Canned Tomatoes
  • Salt and Freshly Ground Pepper, add to taste
  • 50ml Nando‘s Mild PERi-PERi Sauce (or depending on heat tolerance substitute with Nando’s Hot, Extra Hot or Extra Extra Hot PERi-PERi Sauce)

Method

Preheat oven to 180°C. Heat olive oil in a casserole dish over medium heat. Add celery, carrots, onions and bay leaves and fry for 10 minutes. Add the beef cubes and flour, and then stir. Add Nando‘s Mild PERi-PERi Sauce, mushrooms and tomatoes. Bring stew to the boil and move casserole dish to the oven. Cook for 2½ - 3 hours. Remove bay leaves and season with salt and pepper. Serve with cous cous or a starch of your choice.
