Profession: Miss Universe Australia 2009, model (www.rachaelfinch.com)
Signature dish: crispy skin barramundi with blue cheese salad and crepes with chocolate sauce
Recently back from Barbados where she competed for the Miss Universe title, Rachael Finch has a wealth of experience of cooking experience, despite being the youngest competitor in the competition.
In the last few years, Rachael has travelled the world modelling and has picked up international cooking influences along the way.
“I’ve been really lucky in that I’ve been able to taste some beautiful cuisines from all over the world through my travels and that’s inspired me to experiment and try new recipes. I lived in Singapore for six months and was intrigued with some of their dishes and techniques. I didn’t want a bar of eating the insects, though!”
“I like simple food with lots of flavour like risottos, casseroles and fish. I’ve never cooked many desserts but I’ve been practising recently and I’m starting to enjoy making them and eating them!”
Being a model, Rachael’s learnt to really appreciate good quality, healthy food and to make the most of what is in season.
“I haven’t let myself be pressured into not eating or not enjoying food. For me, food is something I love and I’m not going to turn my back on it.”
“I absolutely love throwing a dinner party and enjoy every part of it, from deciding what the menu will be, to decorating the table and of course, cooking the dishes. I get real pleasure out of cooking for my friends and family.”
Rachael thinks her competitive nature will serve her well in the challenges, along with her attention to detail.
“I think I’m quite organised in the kitchen. I’m methodical and I like to prepare everything first so I can just get on with the cooking. I am a bit worried about the time pressure though – I’m used to cooking in my own time and space and although I’ve been practising cooking my signature dish to a timer, you never know what can happen.”
“I would really love to get through the first round and into the semi-final, that would really validate my cooking skills but ultimately I’d just be really flattered the judges liked my food!”
