Pasta Uno Carbonara

Ingredients

100g linguine
1 egg, lightly beaten
¼ cup Australian cream
1 tablespoon chopped fresh flat leaf parsley
50g Perfect Italiano Mozzarella Shredded
25g Perfect Italiano Parmesan Shredded
10g Western Star Butter
1 clove garlic, crushed
3 slices prosciutto, roughly chopped
Freshly ground black pepper, to taste

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 1

1. Cook linguine in boiling salted water until al dente, drain.

2. Combine egg, cream, parsley, Perfect Italiano Mozzarella Multi Pack and Perfect Italiano Parmesan Multi Pack. 

3. Melt butter in a frypan and sauté garlic and prosciutto for 1-2 minutes.  Add hot pasta and egg mixture, stir until cheese melts and sauce becomes thick and creamy.  Serve hot pasta seasoned with freshly ground black pepper.
 
Notes:  Pasta Carbonara is best made and enjoyed immediately.
This recipe can be multiplied to serve a larger number of diners. 
This recipe was a favourite of the coal miners in Italy, in days gone by, and the final dusting of pepper on the completed dish represents the coal dust that was very often clinging to the miners when they ascended the mines.
