Panzanella Salad

Ingredients

½ loaf stale Italian-style bread
4 very large, ripe tomatoes
1 garlic clove, finely chopped
½ cup extra virgin olive oil
½ cup balsamic vinegar
1 large red onion finely sliced
6 fresh basil leaves sliced or left
whole if small
1 tablespoon fresh oregano leaves
Sea salt
Freshly cracked black pepper

Method untested

1. Preheat the oven to 150°C. Remove and discard the crusts from the bread. Cut the bread into 3cm cubes and spread them into baking tray. Dry in the oven for about 15 minutes until crisp. Allow to cool.

 

2. Cut the tomatoes into 3cm cubes. In a large bowl combine the garlic, olive oil and vinegar. Add the bread and toss to coat. Add the onion, basil and oregano and season to taste with salt and pepper. Add the tomato and toss gently.

 

3. Set aside for 30 minutes before serving to let the flavours infuse.
