Method untested

Prep time: 20 minutes
Cooking time: 15 - 18 minutes
Serves: makes 2 pizzas

1. Combine flour, oregano, thyme, yeast, sugar and salt in a bowl and mix until combined. Make a well in the centre, and pour in olive oil and warm water. Mix together to form a wet, smooth dough. Tip onto a floured surface, and knead with the ball of your hand to form a smooth, elastic dough. Place into a clean bowl, in a warm position, and allow to rise for 20 minutes.
When risen, re knead the dough and allow to re prove for another 20 minutes. Divide into two, then roll each dough out to fit a 25cm round or square pizza tray.

2. Bake at 210°C for 15 – 18 minutes.

3. Here are some great toppings for your pizza:

• Shredded ham, torn green olives and bocconcini topped with rocket
• Fresh garlic and thinly sliced potato
• Fresh sliced tomato with shredded mozzarella
• Finely sliced red capsicum with shredded chicken and dollops of pesto
