Serves: 4
1. Heat oil in a large saucepan. Add chicken and cook until golden brown. Remove chicken from pan.
2. Add onion and cook for 5 minutes until softened.
3. Add rice, garlic and pumpkin and cook for 1 minute. Pour in stock and bring to the boil, stirring occasionally. Cover, reduce heat to low and simmer for 20 minutes, stirring occasionally, or until rice is just cooked through.
4. Remove from the heat, stir in chicken, spinach and parmesan cheese. Cover and let stand for 5 minutes to allow the chicken to heat through. Serve immediately with extra parmesan cheese, if desired.
