After two years of study to become a chef, Nick started work in a restaurant in Torquay (UK) and then moved to London. His most memorable chef to work with was Richard Corrigan at Fulham Road and Lindsay House. “He ran a very tight kitchen and is a very big and intimidating man with an amazing gift for flavours.”

Nick cooked for the Red Hot Chili Peppers on their UK tour and had to do most of the work from a van or from the side of stage. He also worked in the South of France on super yachts as a personal chef. He arrived in Sydney in 2009 and has worked at restaurants such as Koi, Wildfire and Flying Fish.

Nick has spent a lot of time travelling over the years. “I think it’s important for a chef to travel, it opens their eyes to different cultures and food”.

Nick says his main qualities are that he is calm under pressure, organised and a good team player. He is competitive, cannot abide laziness in the kitchen and has been known to get into the kitchen early to get the best pots.

He lives with his partner, Angela Sharpe, and daughter Emma (2) and says his greatest achievement is becoming a father. 

Nick loves street food as much as he loves fine dining. “There are just so many great dishes either way. I love getting surprised by food – anything that makes you sit up.” He is not afraid of cooking anything, in any way, shape or form.

“Cooking and food is in my blood – I can’t think of ever having a job not relating to food, no matter how it’s done or prepared.”
