Method 
Makes 2
1. Combine the water, yeast, sugar and 2 tablespoons of oil in a small bowl. Stir to combine. Combine flour and a pinch salt in the large bowl of the Mixmaster. Add yeast mixture. Using the dough hooks, beat on low speed (1-2) until dough comes together.
2. Increase the speed to medium (4-5) and beat for 8 minutes or until smooth and elastic. Cover the bowl with plastic wrap and a tea towel. Set aside in a warm place for 30-60 minutes or until dough doubles in size.
3. Preheat oven 230°C. Combine the remaining 2 tablespoons oil and garlic.
4. Punch the dough down with your fist. Turn the dough onto a lightly floured surface and knead until smooth. Cut the dough in half. Roll each piece of dough out to 22cm x 34cm rectangle.
5. Brush garlic oil over the pizza bases. Spread 2 tablespoons passatta sauce evenly over each pizza base. Bake for 10 minutes until light golden around the edges. Remove pizzas from oven. Spread remaining passatta sauce over the bases, sprinkle with parmesan and top with mozzarella.
6. Swap pizzas around in oven and bake for 8-10 minutes or until cheese is melted and bases are crisp. Sprinkle with basil. Season with salt and pepper and serve.
