"I love offal, tripe and tongue. I could even cook brain if you asked me..."

French cook Justine is positive that her classical training will give her a certain je ne sais quoi over the other contestants. "I would describe myself as a rustic cook, not a modern day cook. I like rustic French recipes. My mum used to own a French restaurant and my family is originally from France. I really believe that French cooking is the basis of every good recipe."


This poised contestant's confidence has already ruffled the MasterChef judges' feathers. "In the auditions the judges liked my food but criticized my attitude. Matt said that I was too much of a smart-arse and a bit cocky. George told me that I talk too highly of myself. I tried to fire back and they couldn't believe it! I'm going to have to bite my tongue a lot of the time but I'm going to be myself and say what I want to say. You have to show them respect but I have that fire."


Cooking since she was a child, Justine's inspiration is her Mum. "I've been cooking since I could put a knife in my hand. I've loved it since I was 8-years-old. My biggest memories are learning from my Mum and my Grandma, and being their sous-chef peeling potatoes for stews, and chopping vegetables for roasts."


A daring cook, Justine isn't afraid to experiment with all sorts of ingredients and likes to put effort into her cooking. "My favourite chef is Alain Ducasse. His cooking is so complicated and takes a lot of work. It makes it more of an achievement to cook like that. I would love to cook with truffles when I can afford them, and I love offal, tripe and tongue. I could even do brain!"


This complicated cook has put a trip to France on the backburner in order to take part in MasterChef Australia and has her dream firmly in mind. "I would love to own my own bistro and take over a rundown pub, fix it up and make warm hearty food. I was planning to move to Paris but this competition is bringing me closer to that dream so Paris will have to wait."
