Fried, crunchy, sunny-side up
Favourite ingredient and why?
I love cooking with onions. They form the basis of nearly every dish from every cuisine. Few dishes can be completed without them.
What dish would be the way to your heart?
Any dish that combines cheese and spinach. What a wondrously erotic combination!
What’s your favourite tune to cook to?
Sneaky Sound System’s ‘I Love It’. Connie Mitchell’s vocals are gloriously joyous!
What’s the first meal you remember cooking and was it a success or a disaster?
The first meal I remember cooking was an ‘Egg Surprise’ – surprise being the key word. I was 8 years old. It involved cutting a hole through the centre of a piece of bread, frying it in a frying pan and then cracking an egg in the hole. I remember burning the bread and my hand!
Who do you cook for the most?
My darling husband Mark FitzGerald – my biggest fan and my toughest critic.
What three ingredients would you take with you to a desert island and what would you cook with them?
I would take eggs, potatoes and tomatoes. Providing I could extract some coconut oil from the coconut palms and gather fish, prawns, oysters from the sea and lagoons I would feast every day on seafood broths, soups, casseroles and breakfast fry-ups!
If you were having any three people, alive or dead, over for dinner, who would they be and what would you cook for them?
My husband Mark FitzGerald, chef Rick Stein and comedian Ricky Gervais. I would cook a paella piled with fresh rabbit, chicken, chorizo and seafood.
