They were going to have two hours and 15 minutes to make their croquembouche; a tall cone of profiteroles filled with crème patisserie and bound with caramel, surrounded by spun sugar studded with tiny violets.
Adriano told the contestants they had to double task while making this recipe and then gave them tips as they began to cook.
Julie was just ahead of the other contestants and Andre told Poh to get a move on because she was falling behind. Poh struggled making her choux buns for her profiteroles and she despaired when she removed them from the oven because they didn't look good. Poh panicked and stopped cooking. Gary gave her a pep talk and she put another batch of choux buns in the oven, which turned out much better.
The contestants kept burning their fingers as they dipped their profiteroles in toffee to assemble their croquembouche, placing the profiteroles in a metal cone. The contestants then had to tip the cones upside down, praying that their croquembouche would emerge in one piece.
Poh's was upright and Chris' was broken at the bottom, so he had to remould it with more caramel. Julie's croquembouche broke in half, with the top of it stuck in the cone.
Tom's dessert was the tallest but it started to slump to one side when he placed it in front of Gary and George. Tom explained that he had run out of caramel to do the spun sugar. Gary noted that some of the profiteroles were overcooked but said the custard was good.
Gary found that Chris' custard was really nice and his caramel was fine but thought his profiteroles were a bit undercooked. George said they weren't crispy enough.
When the judges tasted Poh's fine looking croquembouche, they were amazed that she had produced such a good dessert after nearly giving up during the pressure test. They said her caramel was perfect and the custard delicious.
Gary said Julie's effort had better taste great since it looked so bad, and in the event, the judges thought her croquembouche tasted sensational. Gary said her profiteroles were light and fluffy.
The judges told Tom his profiteroles let him down and Chris that his were slightly undercooked. They remarked on Poh's top notch presentation and how she redeemed herself after her disaster. Julie was informed that her profiteroles were close to perfect.
Poh, Julie and Chris were safe and Tom was eliminated. He said he's had a fantastic time on MasterChef and thanked the judges for all he has learnt from them. Julie was upset and said she's found a friend she'll have for the rest of her life in Tom.
Returning to his family and friends, Tom has been working with chef Phillip Johnson at Brisbane's prestigious e'cco bistro. Tom's loving the experience he's gaining and enjoys every minute of working in a professional kitchen.
