Serves: 4
1. Heat 1 tbsp oil in a large wide saucepan over medium high heat. Cook chicken in batches for 5 minutes until well browned, stirring often. Remove and set aside.
2. Add remaining oil to saucepan and heat over medium heat. Add onion, garlic and cook for 5 minutes. Add rice and cook for 1 minute until rice is coated.
3. Stir in the soup and stock, bring to a boil. Reduce the heat to low. Cover and cook for 15 minutes., stirring occasionally.
4. Stir in peas and chicken, cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.
