Method 
For the Crostoli
1. Beat eggs and sugar until ribbon stage, with whisk. Mix in sifted flour, melted butter, marsala and vanilla essence. In a mixer with a hook, work together to form a dough. Rest for ½ hour.
2. Cut dough into four even pieces to feed through the machine. Pass the dough through pasta machine till smooth and silky and almost see through. Cut on an angle using crinkled pasta cutter, approximately 3cm wide. Deep fry until golden and puffed up.
To serve
1. To serve, dust with plenty of icing sugar.
