    Episode 70: Finale

    For the first round of finale, the contestants had to cook one hot entrée each, catering for 35 people. They were given three hours for prep, half an hour for service and were allowed to choose two contestants to help them with plating up. Audra chose Amina and TK; Andy selected Ben and Beau; and Julia called upon Mindy and Kylie. The hopefuls produced some beautiful results, with each dish impressing the judges, although they questioned whether Audra’s salad could really be considered a hot dish. Julia won the first round of judging with a total of 25 points and by a margin of 23 points to 22 Andy beat Audra and joined Julia in the final two.

    For the second round, Andy and Julia had 90 minutes and free use of ingredients to produce a main that could potentially be Australia’s national dish. Julia opted for a lamb rack with vegetables, while Andy put a modern spin on a seafood basket. While Julia’s undercooked protein gave the judges cause for concern, Andy’s effort blew them away, as he won the round by a total score of 28-21, scoring a perfect 10 from Gary in the process.

    Andy led by 51 points to 46 going into the final round, with the contestants taking on a dish conceived by Christine Manfield. The guest judge unveiled a dessert to rival any seen by a MasterChef finale: ‘Gaytime Goes Nuts.’ The fiercely complex dish pushed Andy and Julia to their absolute limit, though both managed to plate up efforts that left the judges with little to choose between them. Julia scored a total of 22 points, but it wasn’t enough to top Andy’s 25, as he deservedly claimed the title of MasterChef 2012.

    Standing between the contestants and a place in finale was a Three Hat Challenge. Each hopeful was paired with a culinary legend as a mentor – Jacques Reymond (Mindy), Mark Best (Andy), Shannon Bennett (Julia) and Peter Doyle (Audra) – and had 90 minutes to produce a signature dish worthy of a Three Hat restaurant. They could call upon their mentor for one 15 minute period during the challenge to assist with advice. With time proving a major obstacle for most of the contestants, it was only Andy that truly made the task his own, once again winning dish of the day and a place in the final three of MasterChef 2012. Julia joined him, and with Mindy failing to properly cook her fish, the judges awarded the final spot to Audra.

    The second Elimination Challenge of finals week was in two parts. For the first, the contestants had to cook the perfect sauce for the perfect steak in 20 minutes, with unlimited use of ingredients. Andy and Audra were the standouts – the latter’s vinaigrette sauce winning her the challenge. For the second round, MasterChef UK judge John Torode guest judged, bringing a cow in the kitchen and talking through various cuts of beef. Based on their positions in the sauce round, the contestants got to pick which cut they wanted to cook with. Once again, Andy and Audra performed brilliantly, with the tables turned as Andy was announced the winner. Sadly, his close friend Ben struggled throughout and was Eliminated from the competition.

    Finals week began with a challenge at Bennelong, the Opera House restaurant run by Guillaume Brahimi. Each contestant had to prepare a dish, drawing knives to decide who got to pick first. The difficulty of the task was apparent throughout, with Audra particularly struggling. The hopefuls each managed to plate up their dishes, with Andy’s Snapper singled out as the dish of the day. Unfortunately Kylie’s Parfait had curdled after being over whipped, giving the judges no choice but to send her home.

    The last MasterClass before finals week began with Anthony Puharich from Victor Churchill butcher stopping by the kitchen to talk the contestants through picking between different cuts of beef. Gary then followed the theme by making a Grilled T-Bone Steak with Onion Puree and Roasted Winter Vegetable. Matt Preston demonstrated how with a few simple home ingredients you can create something delicious, making a Bean Soup, Cola Baked Chicken and Black Banana Ice-Cream. Gary then closed things out with a Scottish Butter Cake.

    For the week’s final Elimination Challenge, the contestants’ loved ones were welcomed to the kitchen, who then set the dish they wanted cooked. Despite the presence of their biggest supporters the nerves in the kitchen were rife, yet each of the hopefuls managed to plate up a brilliant dish, giving the judges plenty to chew over. Mindy’s Thai curry won dish of the day, sending her through to finals week. Andy joined her, leaving the final spot to either Julia or Alice. By the closest of margins Julia was awarded the decision, seeing Alice Eliminated.

    To decide who would go through to finals week and avoid the last Team Challenge of the season, the contestants had one hour to produce a French-inspired dessert. Alice, Julia and Audra were the best performers, with Audra’s Chocolate and Pear Tart earning her the overall win. Adriano Zumbo then entered the kitchen wheeling an epic edible table centrepiece, with the hopefuls, working in pairs picked by Audra, tasked to go offsite and create a towering dessert of their own. The results would then be judged by Matt Moran and six of the country’s best pastry chefs. Kylie and Ben took the win, sending them through to join Audra in finals week.

    For the week’s second Elimination, the contestants first had to keep up with special guest Kylie Kwong, mirroring her as she made a Steamed Blue Swimmer Crab with Black Beans and Chili dish. Ben and Andy presented the best efforts and were safe. For the second round, the remaining contestants had to select a core ingredient, then could choose a further eight fresh ingredients to cook a Chinese inspired dish in 45 minutes. Audra was responsible for the best dish, leaving Beau and Julia competing for the final safe spot, which went to Julia. With a smile, Beau exited the MasterChef kitchen.

    Alice opted not to use her Immunity Pin in the Pressure Test, which meant competing against Ben and Wade. Celebrity chef Grant King unveiled the dish the three hopefuls would be cooking: Crispy Scaled Snapper with Calamari Crackling. The contestants had two hours and 45 minutes to prepare the highly complex dish; Ben moved at a pace considered too laborious by many, Alice struggled with filleting her snapper and Wade suffered an eleventh hour mishap by forgetting to sear his calamari pieces. Finally managing to bring all his elements together with seconds to spare, it was Ben who was awarded dish of the day, while Alice’s effort was considered marginally better than Wade’s, sending him home.

    Gary shocked the contestants by announcing that next week would be finals week, with three Eliminations this week and a contestant sent home each day next week. The hopefuls then competed in a ‘Mystery Fridge’ Challenge, having to pick a fridge and use all the ingredients within it to cook a dish in 30 minutes. Andy cooked the best dish, with Audra and Mindy close behind. MasterChef Magazine’s Sally Feldman judged the Invention Test, with the winning dish getting to grace the cover. The contestants had an open pantry and 90 minutes, with Andy getting an extra 30 minutes as a reward for his Mystery Box win. Mindy, Kylie and Julia presented the standout dishes, with Mindy taking the overall win for her Chocolate Mouse Tart. Wade, Ben and Alice cooked the least impressive, sending them into a Pressure Test.

    Italy Week concluded with another delicious MasterClass, featuring an array of distinguished guests. Massimo Spigaroli prepared a Clay Baked Guinea Fowl which left the contestants salivating. MasterChef favourite Neil Perry dropped by to cook a Vegetable Lasagne and George capped off an incredible week by giving his take on the MC ‘death dish’, serving up a Parmesan Risotto with Poached Egg.

    The Green Team competed in an Elimination Challenge, having to feed a Tuscan village. Alice bravely opted not to use her Immunity Pin. The contestants each had to cook a course, with first choice of dishes falling to whoever could hand roll 100g of pici pasta the fastest. As the last competitor to finish, Deb was left with the suckling pig dish – an unenviable task for the former vegetarian. After sampling all the dishes, the villagers voted Alice’s anti-pasti course as the best of the day, and Deb’s pig the worst, seeing her eliminated from the competition.

    The contestants competed in a ‘Death Dish’ Challenge, having to recreate the risotto of Maestro Gualtiero Marchesi – a task at which few managed to excel. Wade, Audra, Mindy, Kylie and Beau were considered the strongest, and formed the Red Team for the forthcoming Team Challenge, while Julia, Ben, Andy and Alice made up the Green Team. The Team Challenge was at the Barilla Pasta Factory, with the teams cooking three pasta dishes each to feed 500 staff. For their advantage, the Reds got first choice of which pasta types they wanted to cook with. The teams both produced superb performances, but the Red Team’s lasagne was such a hit it gave them the overall win, sending the Greens into an Elimination Challenge.

    Before Alice and Mindy faced off in their Immunity Challenge, the pair set off on a ‘taste tour’ of Florence, encouraged to absorb the sights, sounds and flavours in preparation for the dishes they’d be making. Italian cooking legend Antonio Carluccio judged the challenge, which took place over two rounds. The first was a taste test, with the contestants having to isolate the ingredients in a beautiful ribollita. Alice won the round, and the option to choose either savoury or sweet for the next stage, choosing savoury. They then had 90 minutes to cook the same three savoury dishes. With the judging extremely close, it came down to whose rabbit dish they preferred; they chose Alice’s, awarding her a coveted Immunity Pin.

    Alice, Wade, Mindy and Julia competed in a Pizza and Pasta Challenge, cooking lunch for 120 hungry Roman diners, while the rest of the contestants served either on front of house or as dishwashers. With four hopefuls sharing limited kitchen space, the action was manic, with George having to step in to assist in order to get the customers served. Mindy’s pasta dish and Alice’s pizza were a resounding hit with the judges, sending them through to the all-important Immunity Challenge.

    For their first Challenge of Italy week, the contestants, split into teams of two, had to wander the streets of Rome seeking inspiration for a dish that would provide a ‘Roman story on a plate.’ After their expedition, the teams went to the magnificent Villa Aurelia where they had 90 minutes to cook. Joining Gary, Matt and George in judging was Italian food maestro Massimo Bottura. The best dishes were judged to be the Green Team of Alice and Wade’s Squid Ink Gnocchi, and the Orange Team of Julia and Mindy’s Roman Seafood Stew. Their reward: to cook in the following day’s Challenge for a shot at guaranteed Immunity.

    Guest Vincent Gadan set an incredible Pressure Test for Amina, Andrew and Beau: a Salted Praline Parfait. For the second round, contestants had to choose five ingredients, again with 30 minutes to cook, with Alice and Deb winning a safe retreat to the balcony. Close friends and roommates Jules, Julia and Tregan contested the final round, with the ingredients dropped to three. The results were close, but the judges gave the edge in quality to Jules and Julia’s dishes, eliminating Tregan.

They headed back to the MasterChef house to prepare their finest ‘home style’ dishes, with the chefs responsible for the top two safe from a potential Elimination Challenge. Ben and Audra took the win. Remaining standouts Julia, Mindy and Wade were captains in the following Team Challenge, which saw the contestants divide into three groups and head to suburbia, where they had to use the ingredients found within their assigned houses to produce three beautiful dishes. Continuing his run of good form, Wade’s Red Team won the Challenge, leaving Blues and Yellows fearing for their MC futures.

    Tregan competed in her Immunity Challenge against Daniel Wilson, head chef and owner of Melbourne restaurant Huxtable. The core ingredients were rum and raisin, with Tregan prepared to sacrifice some of her time advantage in order to pick raisin. Jules and Jules were selected to assist her in the task. The results from both teams impressed the judges and on occasion locked them in debate, signalling that the final result would be close, and indeed it was. Tregan’s Goat’s Cheese and Raisin Ravioli was awarded best main, but Team Wilson got the nod for their main and dessert, handing them the overall win.

    Andrew, Amina and Sam faced a Pressure Test courtesy of guest Chrstine Manfield, who lifted the cloche on a highly complex Smoked Trout with Mussels, Turmeric and Lemongrass Broth. With so many ingredients involved in the dish’s creation, the contestants faced a tough challenge, but acquitted themselves admirably. Andrew was judged to have produced the dish of the day, with the margin between Amina and Sam incredibly slim. Having reduced his broth by too much, the judges opted to send Sam home, allowing Amina to cook another day.

    The Mystery Box Challenge was revealed to be soup themed, with the contestants tasked to bowl the judges over with some hearty servings of deliciousness. Much to the delight of the judges and his fellow contestants, Wade produced a brilliant performance, winning the challenge with his Mushroom Soup with Porcini Croutons. He then got to choose the core ingredient for the ‘Dude Food’ Invention Test, selecting Kewpie mayonnaise. The results were often spectacular, but leaving the judges in particular ecstasy was Tregan with her Braised Pork Ribs and Onion Rings dish, winning her the chance to cook for Immunity.     While the Red Team enjoyed a special MasterClass courtesy of Giovanni Pilu, the Blue Team faced their Elimination Challenge, which began with a ‘Name the Cake’ round. Facing a table full of sweet treats, the contestants had to take turns naming the cakes, with the first two to guess incorrectly going through to a sudden death cook-off. In a cruel twist of fate, it was close friends Emma and Ben. For the second round, they each had to cook a layered cake, with both competitors clearly affected by the nature of the occasion. The judges rules Ben’s effort to be marginally superior to Emma’s, resulting in her Elimination and a highly emotional farewell.

    The contestants faced their biggest Team Challenge yet: catering a Sri-Lankan wedding for 450 guests. Ben headed the Blue Team, Jules the Reds, with the captains cooking raita to guest Kumar Mahadevan’s recipe for to right to get first pick of the dishes they’d be making. Jules won the advantage. With a tight timeframe to get the dishes cooked and served, the pressure was unlike any the contestants had faced before, yet both teams were up to the task. The guest voting was incredibly close, but breaking their curse the Red Team finally secured a win, taking the challenge by 243 votes to 207.

    Audra cooked in an Immunity Challenge against Bar H’s owner and head chef Hamish Ingham. Hamish was given the option of two core ingredients, tea and coffee, selecting the former. Audra chose Amina and Kylie as her helpers, with the team having 90 minutes to prepare their three dishes. In one of the most positive tastings seen yet, the judges were left with a tough decision to make. Amina’s duck dish won the entrée round, while Hamish’s quail took the main, and with team’s dessert blowing the judges away they took the overall win and denied Audra an Immunity Pin.

    Emma, Filippo and Wade competed in a Pressure Test, having to recreate Gary’s perfect Quiche Lorraine in 75 minutes. A simple task on the surface, but made considerably tougher by the lack of a recipe. The contestants also had to prepare the perfect accompanying salad. A test of knowledge, palate and technique, with everything on the line, the competition was fierce. Taking many positives away from the tasting, the judges declared Emma’s dish to be the best. With his dish containing cheddar rather than gruyere and the ingredients of its filling unevenly distributed, Filippo was Eliminated.

The contestants had to pick one of three Mystery Boxes, with the respective ingredients for each chosen by the MasterChef alumni.     The Red Team competed in an Elimination Challenge over three rounds. For the first, they had 20 minutes to make a dish of their choosing, with unlimited use of whatever ingredients they liked. Kylie, Filippo, Amina and Deb were judged to have produced the most impressive dishes, keeping them safe from Elimination. While the Blue Team were enjoying a Neil Perry MasterClass, the remaining Reds cooked off in round two, only with a 10 minute time limit. Tregan, Emma and Sam produced the top three dishes, leaving Mario and Julia to contest the final five-minute round. After a tightly fought battle, Julia’s dessert was judged superior to Mario’s salad, sending him home.

Given the enormity of the task – from serving canapés for a function to fulfilling room service orders – the hopefuls performed superbly. Getting their dishes out most quickly and efficiently, though, it was the Blues that took yet another Team Challenge victory.

    The contestants lifted the lids to the week’s Mystery Boxes to reveal a single egg apiece, which had to be the hero of their respective dishes. The hopefuls showed tremendous imagination with their offerings, but the best dishes belonged to Amina, Andy, Andrew, Jules, Kylie and Mindy, with Kylie’s beautifully presented dessert winning the challenge. Rick Stein then introduced and judged a seafood-themed Invention Test: six kinds of seafood were revealed and six countries, with the contestants divided into six teams (captained by the Mystery Box top performers) picking a type and cooking a dish in the style of their chosen country. Team Jules won, sending them through to an Immunity Challenge, while Team Andrew were left facing a Pressure Test.

    The Elimination Challenge began with a Skills Test – the contestants having to cook the perfect medium rare steak, raising their hand when they felt theirs was ready to be judged. Kylie, Ben, Andy and Sam were found to have either under or overcooked their meat, sending them through to the second round: an onion ring cook-off. Kylie and Ben most impressed, keeping them safe and leaving Andy and Sam to compete in the final round. The sudden death cook-off took place at the Stanley Hotel, with the lads having to cook a dish each for 50 people. Andy cooked beef, Sam crayfish, with both showing superb skill as well as sportsmanship throughout. Their food and exemplary conduct gave the judges no choice but to declare the battle a tie and keep them both in the competition.

    The contestants were divided into two teams for an Afternoon Tea Challenge, Andrew captaining the Reds and Amina the Blues. The teams had to produce four dishes to serve at an afternoon tea for 100 guests, who would vote for their favourite. Some of the contestants foraged for ingredients for their dishes, while others milled flour – a process that wasn’t without incident. Continuing its winning tradition, the Blue Team took the challenge by a landslide 60 votes to 12, leaving the Reds facing an Elimination Challenge and potential Elimination for one of its members.

Firstly, the contestants had to catch their own salmon – the bigger the fish, the more time they had to cook with it. Amina took the win with her Salmon Sashimi dish, earning the chance to cook for Immunity against Phillipe Leban. Much to Amina’s horror, the dish was a dessert; a complex and beautiful Crème Chiboust. Fighting through her trepidations, Amina put on a valiant display, but it wasn’t enough to match Leban’s finesse and claim an Immunity Pin.

    Tasmania Week began with a four-team Market Stall Challenge, which took place at Hobart’s famous Salamanca Markets. The teams had to set up stalls and sell dishes made exclusively from market-sourced ingredients, with the team making the most money while also impressing the judges taking the win. Each team served some delicious fare, but it was the Blue Team that won by a substantial margin, earning them the right to cook off against each other for a shot at playing in the week’s Immunity Challenge.

    The new week began with a Mystery Box Challenge, featuring pork and a number of seemingly disparate ingredients. Their task: to find a way to tie them together. The contestants raced to work, with Andy’s progress being slowed after suffering a nasty burn. Audra, Dalvinder and Beau’s dishes were chosen as the best, with Dalvinder taking the overall win and an advantage going into the ‘Seduction’ Invention Test. The judges revealed numerous pairs of ingredients, with everyone but Dalvinder having to choose at least one to make the hero of their dish. Dalvinder, holding the advantage, could cook with anything she pleased. Tregan, Sam and Filippo’s dishes most impressed, with Sam taking the overall win for his Oysters with Champagne Jelly. Matt then revealed that the contestants were headed for a week in Tasmania.

Julia undercooked her duck and TK struggled with the best way to cook her turkey. The judges decided that TK’s dish was the least impressive of the two, sending her home.

    The Oz Harvest Team Challenge was revealed, with Ben captaining the Blue Team and Amina the Reds. The teams had to gather food from various Sydney restaurants and hotels, then prepare a menu using their ingredients for a charity black tie lunch featuring some of Sydney’s culinary elite. Proceeds from the event would go to Oz Harvest. Some beautiful dishes were served, making clever use of the ingredients, with one creation so well received it prompted a $20,000 donation. After the Challenge was completed, Matt revealed that dish was the Blue Team’s Fish Pie, easily winning them the day and sending the Reds to face Elimination.

The results were spectacular: Amina’s kiwi-cured beef dish won the entrée round, Shaun’s team won for their dessert, and Audra’s salmon sashimi was declared the dish of the day, winning Mindy an Immunity Pin.

When it came to tasting, however, it was Kath and Andrew who particularly struggled, due to their cakes being undercooked. With Kath’s effort the worst offender, she became the next contestant Eliminated.

Julia won the power to select the core ingredient for a Mexican-themed Invention Test, choosing cactus, much to her fellow contestants’ horror.     The contestants arrived for a Yum Cha Team Challenge, which each team having to prepare and serve five different dishes to the public, whose vote would decide the result. The contestants cracked open fortune cookies to discover their teams, with Beau finding himself in the captain’s seat for the Blues and Deb the Reds. Before the Challenge began, the team captains had to see who could make the best prawn har gow in 90 seconds. As the winner, Beau got to swap one of his teammates for one of Deb’s, trading Matt for Audra. Sourcing their ingredients from Chinatown on a budget of $1000 per team, the contestants got to work, Beau proving a calmer influence as captain than Deb. With the Blue Team getting their dishes out long before the Reds, their haste proved key, as they won by a landslide 148 – 97 votes.

    Mindy entered the MasterChef kitchen for her Immunity Pin Challenge, with her opponent revealed to be Darren Robertson of The Three Blue Ducks and formerly head chef of Tetsuya’s. They had 90 minutes to prepare an entree, main and dessert. Mindy was presented with the option to either choose the core ingredient, or select herself which two of her fellow contestants would help her. She opted for the latter, selecting Amina and Julia. Robertson, meanwhile, chose cheese as the core ingredient. With the girls producing restaurant quality results, the competition was close. The judges gave the entree to Amina’s Goat’s Cheese and Beetroot Salad, but the Blue Duck boys took main and dessert, narrowly denying Mindy the win.

    The losing members of the Red Team arrived for their Elimination Challenge, taking place over three rounds. In ‘Name the Pasta’ each contestant had to step up to a table containing a huge selection of varieties, pick one and correctly give its Italian name. If they guessed correctly, they were safe; the first six people to guess incorrectly would go through to the next round. Kevin was up first, and much to his peers’ dismay picked an obscure variety incorrectly believing it to be lasagne. The five contestants behind him also guessed incorrectly, forcing them into round two, in which they had to make and hand cut at least 250g of fettucine. Jules and Kevin were last to finish and competed in a final cook-off, having to recreate a beautiful raviolo dish. Though his presentation was superior, the taste of his dish didn’t quite make the grade, sending Kevin home.

    The contestants arrived at Kings Cross for their first Team Challenge, with the judges explaining that they would be running The Ortolan and Concrete Blonde, two restaurants opposite each other on Bayswater Road, with the establishment making the most money declared the winner. Andy made a commanding leader, with his team generally looking the more composed throughout, although after a shaky start the Red Team began to look more in their element. The final cash total was close, the Blues making $2748 to the Red Team’s $2232, leaving the latter facing an Elimination Challenge.

The amateur chefs each had an hour to prepare a dish and five minutes to present to the judges, requiring at least two ‘yes’ votes to progress through to the next stage. There was a mixture of elation and heartbreak as some made the grade while others suffered from a bad day at the office. With the Top 50 aprons bestowed, the ecstatic recipients were ready to try and fight their way into the Top 24 and a place in the MasterChef kitchen.
