Favourite chef? Fergus Henderson

What’s your favourite restaurant?
Don’t have one.
What's your favourite ingredient and why?
Beer because it is amazingly versatile and there are endless varieties.
What's your favourite utensil and why?
Saucepan because it’s versatile and you can cook pretty much anything in it.
What’s your favourite meal of the day – breakfast, lunch or dinner?
Dinner.
What do you prefer, chicken, beef, seafood or tofu, and why?
None of the above - duck is my favourite.
What dish would be the way to your heart?
You can’t cook your way into my heart.
What’s your favourite tune to cook to?
The sound of people in the background enjoying themselves.
Describe how you felt during the MasterChef audition?
I felt like throwing up.
Tell us about your journey into the Top 20:
It has been quite amazing so far. I’ve met a lot of really nice, like-minded people. Had a million discussions about food and forged some friendships that will last long after this is over.
What do you think you’ll learn from being on MasterChef?
I’ll learn to cook on a more professional level. I’ll be more comfortable in public forums and I think I’ll learn a lot about myself.
Are you nervous about cooking for the judges and why?
I am a little nervous but I crave the feedback and suggestions that come from it.
Tell us about how you got into cooking and how old were you?
I got into cooking when I started at art college. I was 18 and I was no longer living at home so it was a necessity that I happened to love.
What’s the first meal you remember cooking and was it a success or a disaster?
Apricot chicken. In hindsight it may not have been that good but back then I thought it was fantastic.
Who do you cook for the most?
Myself.
What do you love and what do you hate about cooking food?
I love every aspect of cooking. The only thing I hate is getting full.
What three ingredients would you take with you to a desert island and what would you cook with them?
I’d take a whole pig and roast it on the beach. I’d take beer to baste the pig and enjoy drinking it, and potatoes to make a salad to match the roast.
If you were having any three people, alive or dead, over for dinner, who would they be and what would you cook for them?
God, Hitler (he was clearly insane so I'm fascinated what made him tick) and Dita Von Teese. I’d make roasted stuffed pig’s head and serve dessert off Dita.
What inspired you to go on MasterChef?
My friends.
And how do you like your eggs?
Raw.
