Chinese Omelette

Ingredients

1 tbsp oil   
500g pork and veal mince
1 ¼ cups long grain rice, washed well
1 x 35g sachet McCORMICK Rice Cookers Chinese Special Fried Rice
1 tbsp oyster sauce
1 cup diced red capsicum
8 eggs

Prep Time: 25 minutes
Cooking Time: 30 minutes
Serves: 4      
                        

1. Heat oil in a frying pan and pan-fry mince then add to the rice cooker insert pot. Place washed rice, McCORMICK Rice Cookers recipe base, oyster sauce and 2 cups (500ml) water into the rice cooker insert pot and stir.

2. Cover with lid and press selector control to COOK (DO NOT REMOVE LID during cooking). Cook until the selector control switches to KEEP WARM.

3. Fold through red capsicum. Let Stand for 10 minutes with the lid on. Meanwhile, whisk 2 eggs together and pour into a hot pan. Swirl to form an omelette, then when almost set, slide onto a serving plate and keep warm. Repeat with remaining eggs. Divide rice filling between each omelette, then fold over and serve warm.
