Serves: 4
1. Pour stock into a wok, or saucepan, and heat over high heat until just comes to the boil. Add garlic and shallots and cook for 1 minute.
2. Add chicken mince and cook, uncovered, over a medium heat for 10 minutes, stirring or until most of the stock has evaporated. Stir through soy sauce. Remove from heat, add noodles and stir through chicken mixture.
3. To assemble, divide the bean sprouts inside the lettuce leaves, top with chicken mixture and serve. To eat, roll the leaf around the chicken mince mixture and eat with your fingers.
