Chicken and Tortellini Soup

Ingredients

1 litre pack Campbell’s Real Consomme - Chicken
200g cheese or spinach and ricotta tortellini*
1 chicken breast fillet, trimmed, thinly sliced
1 carrot, cut into small sticks
2 green spring onions, thinly sliced
1 cup baby spinach leaves

Preparation Time: 10 mins
Cooking Time: 12 mins
Serves: 4

1. Place consomme into large saucepan over high heat and bring to the boil. Add tortellini and stir until stock returns to the boil. Reduce heat and simmer, uncovered, for 5 minutes.
2. Add chicken and carrot and cook for a further 2 minutes, stirring occasionally, until chicken is cooked.
3. Reduce heat, add the spinach and spring onions and cook for 1 minute until spinach has just wilted. Spoon into serving bowls. Serve with fresh crusty bread, if desired.


*For variation any filled pasta can be used in this recipe.
