Method 
1. Place the chicken into a large casserole dish and add vinegar, soy, water, garlic, bay leaf and pepper. Add extra soy and water if needed.
2. Bring to the boil over high heat, reduce heat to medium and cook 30 minutes or until chicken is tender. Combine the cornflour with enough water to make a paste and stirring continuously mix into the sauce to thicken if required.
3. Cook rice in rice cooker according to manufacturer's instructions
4. Steam bok choy in bamboo steamer until tender.
5. Spoon rice onto plates and top with chicken and serve with bok choy.
