Caribbean Sweet Potato Soup

Ingredients

1.5 litres Campbell’s Real Stock – Chicken
2 tablespoons oil
2 large onions, diced
2 large carrots, diced
1 tablespoon finely grated fresh ginger
2 red chillies, de-seeded, finely chopped
2 large sweet potatoes (900g), peeled and diced
½ cup peanut butter
2 limes, quartered
1/3 cup sliced green spring onions
1/3 cup chopped roasted peanuts

Preparation Time: 15 mins
Cooking Time: 30 mins
Serves: 6-8

1. Heat the oil in a large saucepan over medium heat. Add onions, carrots and cook for 5 minutes. Add ginger and chilli and cook for 1 minute.
2. Add stock and sweet potatoes and bring to the boil. Reduce heat to low. Cover and cook for 20 minutes or until the sweet potatoes are tender. Stir in the peanut butter.
3. Place 1/3 of the sweet potato mixture in a blender or food processor. Cover and blend until smooth. Pour into a large jug. Repeat the blending process twice more with the remaining broth mixture. Return all of the puréed mixture to the saucepot. Cook over medium heat for 2 – 3 minutes or until the mixture is hot. Season to taste.
4. Pour soup into serving bowls. Squeezed over some lime juice. Top with the green onions and peanuts and serve with remaining lime wedges.
