I love reading all the amazing posts from the Sweet Adventures Blog Hop, but never planned to join in, being such a lame dessert maker. However my brother Marc gave me a massive tub of the most delicious, sweet little strawberries today, so I though I'd join in this month's Berry Nice To Meet You blog hop.
I am not much of a sweet tooth. And I'm definitely not much of a baker. In fact, the only cake I can make which consistently works is my easy apple tea cake... So I adapted it to make these little baby cakes, by simply replacing the apple with strawberry, adding a few extra flavours, and making them teeny weeny. (They look a bit like boobies, don't you think?)
Baby Strawberry, Vanilla & Maple Syrup Teacakes
In a large mixing bowl combine:
• 125g melted butter
• 1 cup of self-raising flour
• 1/2 cup caster sugar
• 1 teaspoon vanilla paste
• 2 tablespoons maple syrup
• 1 large or 2 small eggs (free-range of course!)
Mix well, then place teaspoonfuls of the mixture into a mini cupcake/muffin tray.
Gently press a strawberry (or half a strawberry, if large) into the top of the mixture.
Bake at 180C for 8-10 minutes, or until golden and slightly crisp around the edges.
They're not fancy, but if you're a bit challenged in the dessert-making department like myself, they are nearly impossible to ruin! Good luck, lame bakers of the world!
