Favourite chef?
Anthony Bordaine. A very interesting fellow. I really like his series on food of the world in which he travels to loads of exotic locations sometimes quite remote and tries some very out there cuisine.
Favourite place to travel?
I really like going to france, I just think they have a great attitude to life. I mean were else in the world do they turn off the parking meters for lunch?
Favourite dish to cook?
I really like to make homemade pasta along with some good old-fashioned Italian meatballs.
Favourite dessert to eat?
Not so big on dessert but I must say the desserts they serve down at Pier restaurant in Rose Bay Sydney - not only tastes nice but look like works of art.
Sweet or savoury?
Most definitely a savoury person, I prefer the textures and I think there is still so much to be discovered when it comes to vegetables and proteins.
How do you like your eggs?
I love poached eggs most days but also am open to scrambled.
Favourite ingredient and why?
I love cooking with prawns in Australia just because I think we have the best in the world. I really miss them living in the UK. You can get them in the UK but they are no where near as good.
What dish would be the way to your heart?
I love anything my friends cook. It's all about the people you share it with.
What’s your favourite tune to cook to?
I love cooking to Nick Drake or sometimes a little Bob Dylan.
What’s the first meal you remember cooking and was it a success or a disaster?
The first dish I remember cooking was spaghetti bolognaise. My father showed me and it was not as bad as you might think .Although that was all I could and would cook for about five years after that.
Who do you cook for the most?
Friends and family. I love to cook for dinner parties - choose the produce, select the wine - I get a real kick out of it . And my wife always does fantastic desserts.
What three ingredients would you take with you to a desert island and what would you cook with them?
Eggs, flour, water. You can always make bread or pasta.
If you were having any three people, alive or dead, over for dinner, who would they be and what would you cook for them?
I would love to have George, Matt and Gary over for dinner one evening to show them my cooking ability without the the pressure of the clock ticking over my head.
