1. Moroccan baked eggs
Fry onions, red capsicum and chorizo until crispy, then stir in tinned tomatoes, paprika and fresh parsley. Pour into baking dish, crack eggs on top and bake until the egg whites set.
2. Breakfast bruschetta
Top toasted ciabatta with poached eggs, crispy prosciutto and spinach leaves and drizzle with lemon mustard vinaigrette.
Preheat oven to 120C. Whisk four egg whites with an electric hand beater until it forms soft peaks. Add 220g caster sugar gradually while whisking until mixture is thick and glossy. Spoon onto lined trays, turn oven to 90C and bake for about 1.5 hours. Turn the oven off and leave the meringues to cool in the oven. Serve with fresh berries and thickened cream.
4. Fresh pasta
Jamie Oliver suggests mixing 600g ‘OO’ flour with 6 large eggs to form dough. After kneading, feed through a pasta machine, boil and serve with tomatoes, olive oil and basil.
5. Blue frittata
Add spinach and blue cheese (such as dolcellate or Roquefort) to beaten eggs, pour into oiled frying pan and bake until egg is just cooked.
6. Egg Nog
Whisk 4 egg whites until stiff. Separately, whisk 4 egg yolks, 50g caster sugar, a dash of whisky, 200ml milk and 100ml cream until thick. Cook over a low heat in a heavy-bottomed pan until thick and creamy. Remove, fold in the egg whites and serve in mugs with grated nutmeg and cinnamon.
Boil rice in stock with 1tsp curry powder and 1tsp turmeric. Drain and stir through chopped boiled eggs, fresh parsley, cooked peas, fresh lemon juice and butter.
8. Tuscan eggs
Soften red onions in frying pan. Fry eggs and add red chilli and sage leaves. When cooked, slosh in some red wine and serve with crusty bread.
9. Devilled eggs
Boil eggs, de-shell and mix yolk with yogurt, cayenne, and paprika. Put mixture back in white and serve cold.
10. Sweet omelette
Instead of a savoury omelette, add dried fruit, brown sugar and the juice of half an orange. Dust with icing sugar and serve with a dollop of yogurt.
Whisk egg yolk with cream and parmesan. Stir through cooked pasta with crispy bacon and mushrooms.
12. Eggy porridge
As your morning oats are bubbling away, add a lightly beaten egg to thicken and give an extra protein boost. Delicious served with maple syrup, blueberries and walnuts.
13. Huevos rancheros
Wrap fried eggs with salsa and rocket in corn tortillas.
